My family comes from the state of Gujarat in India, which is not known for its spectacular food. However this little gem is one of my favorites. They come in two different varieties: pani puri and dehi (yogurt) puri. For such little bite sized eats they're actually a lot of work. The dehi puri are this yummy buttery fried tortilla topped with potatoes, yogurt, a red pepper chutney, a cilantro chutney, a date chutney all topped with I consider to be Indian bread crumbs. In one bit you get sweet, spicy, salty, tangy in one bite. It's an experience. The other version (the puffed one) is what you'll find all over the street of India. It's a light crispy shell filled with a potato mix and filled with pani (which literally means water). But the pani is this amazing mint and spice concoction that takes this dish over the top. So if you ever get the chance to try these, do it!
