After buying a whole watermelon for one, I seriously struggled to figure out ways to use it all up! One of my favorite things about Austin, is all the juicing place. So I figured, watermelon is like 90% water (hello its called WATERmelon), how hard can juicing it be?Well, turns out, its pretty darn hard if you try it manually! Fortunately just before my arm fell off from mashing, genius struck. Why don't I just stick it in my Ninja? So I did. Which made like so much easier!! The trick is to blend thoroughly then filter out all the pulp using a strainer (a fine mesh one). Add a splash of lime and ginger ale and a little mint, and you have the most addicting summer drink!
1/2 watermelon - chopped into manageable pieces
2 cups ginger-ale
Juice from 1 lime
A couple of springs of mint
Place watermelon in blender and blend for 5 - 10 minutes.
Take a large bowl and drain the juice into it using a fine strainer.
Add lemon juice, ginger-ale, and mint.
Refrigerate for at least 1 hour before serving.
