I'm sure by now you know that mac and cheese is one of my favorite foods! I'm always looking for new ways to prepare it and improve it. One of the things I've discovered recently, is the flavor of garlic is typically too overwhelming for a good mac and cheese dish. However, if you use a generous amount of onion, you'll get a great flavor that's keeps you reaching for more servings.
This recipe is a no fuss recipe I created specifically for my vegetarian thanksgiving. I wanted something that didn't need to be babysat, but still tasted amazing. I think I succeed, and my family loved it! But you be the final judge.
- 1 onion - finely mined
- 1 tbs taco seasoning
- 1 block cheddar cheese - shredded
- 1 cup milk
- 1 tsp black pepper
- 1 tsp salt
- 4 tbs butter
- 1 tbs flour
- 1 box pasta
- In a saucepan, melt butter. Slowly mix in flour. Continue stirring until incorporated. Add milk, and stir for 3-4 minutes.
- Add onion, cook until onions are soft. Add taco seasoning, salt and pepper.
- Mix in cheese.
- When ready to serve stick in the oven for 10 minutes.
