Tomatillo salsa is a great summer staple that's so versatile. It's great with chips, or in a quesadilla, or as an enchilada sauce. Here's my version, which I have to say is amazing! Let me know if you agree.
What You'll Need:
3 to 4 tomatillos - quartered
2 jalapenos - roughly sliced
4 cloves garlic - roughly sliced
1 small onion - quartered
half bunch cilantro
1 cup low sodium vegetable broth (or chicken broth)
salt and pepper to taste
How to Make:
Heat a medium sauce pan and tomatillos. When slightly browned, add onion, garlic and jalapeno. Let brown.
Add vegetable broth and simmer on low for about 20 mins.
Add cilantro and simmer for 2 more mins.
Add salt and pepper.
Add to food processor or blender and blend.
