It's finally summer and for me this means SALAD SEASON! It's way too hot in Florida to eat anything but salad, so I'm always looking for new ways to prep salad. This is a fun (and pretty) version of classic caprese salad. You'll love how easy and yummy this salad is. And it's even more amazing the next day! Let me know what you guys think!
1 Cup Red Tomatoes - Halved
1 Cup Yellow Tomatoes - Halved
1 Cup Fresh Mozzarella - Cut into Small Pieces
2 cloves garlic - Minced
1/3 Cup Fresh Basil - Roughly Chopped
1/4 Cup Balsamic Vinegar
1/4 Cup Good Quality Extra Virgin Olive Oil
Salt and Pepper to taste
Mix all ingredients together. Place in fridge for at least one hour before serving.
**Fun tip for leftover salad - toss with cooked plain pasta - add oil and vinegar if necessary - and voilà Pasta salad!**
