As a Southerner, I love my pimento cheese! While I was at Duke, we'd have Sunday Brunch at this amazing Southern restaurant called Watt's. My personal favorite Brunch entrée was this Pimento Grilled Cheese. Words cannot describe how good this sandwich is. But now that I'm back home, and so far from Watt's, I've tried to re-create that same sandwich. Let me know what y'all think!
What you'll need:
4 oz. Cheddar Cheese
4 oz. Pepper Jack Cheese
4 Tbsp. Cream Cheese
2 tbsp. Mayo
1 tsp. Jarred Pimento Pepper
1/2 tbsp. garlic powder
1 tsps. Cayenne Pepper
2 tsp Penzey's Special Seasoned Sale (if you don't have this substitute with a little paprika, onion powder, salt, and black pepper)
Loaf of bread
The How To:
Place everything but Bread and Butter in blender and blend until relatively smooth.
Heat up pan over med-high.
Toast bread (unbuttered) - ONLY ON ONE SIDE
Place Pimento Cheese on the toasted side and sandwich. Butter the outside facing bread.
Place back into pan and grill until golden and cheese is melted.
