After studying abroad in Italy, I have to say I became somewhat of a pasta snob. I'm always looking for looking for great and flavorful pasta sauces and I have to say this one definitely delivers!
1 box pasta (I recommend rotini, rigatoni, penne)
2 sticks of butter
1/3 cup milk
8 oz good quality Parmesan cheese - grated
1/3 cup white wine (I used pinot grigio)
1/3 cup of water from pasta (the water used to boil the pasta - take it after the pasta is cooked)
1/4 cup fresh Italian parsley - finely chopped
1 small onion - finely chopped
3 cloves garlic - minced
1/2 tbs garlic powder
1/2 tbs paprika
1/2 tbs black pepper
Salt to taste
In a medium saute pan, melt 1 stick of butter. Add mushroom and cook for 2 - 3 minutes (they be almost fully cook but not completely).
Remove mushroom from pan. Add onion and garlic to pan. Saute until onions are transparent (4 -5 mins). Add mushroom back into the pan.
Add wine and reduce. Add pasta water and reduce.
**This is the point where you'd want your pasta to be fully cooked**
Add remaining butter, parsley, and cheese to pan. Immediately add to cooked and drained pasta.
Add milk to pan and stir thoroughly. When see the milk thicken and the cheese melt your pasta is finished!
