To reward myself for actually making to the gym, I have a little post-workout ritual. I'll go and get a kid's sized peppermint hot chocolate at Starbucks! I'm sure the baristas (who by now know me by name) think I'm odd, but I can't resist! However, today I couldn't quite make it to my barre class due to an injured hamstring (or something on that side of my leg). So I decided to cheat a little and make my own peppermint hot chocolate at home!
I was quite terrified of over doing it with the peppermint. If you've ever had a hot cocoa with too much peppermint, you'll know how bad that can be. So I added it in tsp by tsp, tasting it in between each addition (it was quite the sacrifice but someone had to do it :) ) The end result was delicious, especially topped with marshmallows and whipped cream.
- 2 cups milk
- 1/3 cup sugar
- 1 tbs vanilla extract
- 1 tbs peppermint extract
- 4 tbs cocoa powder
- Place everything in a saucepan and bring to boil.
- Stir constantly and break apart any clumps of cocoa with two spoons.
- Garnish with marshmallows and/or whipped cream.
