It hot hot hot! I've been going through ice cream like nobody's business. This ice cream madness plus a craving for ice cream cake gave me an idea. Possibly a destructive idea but it was way too good not to try. An easy deconstructed ice-cream cake.
1 box white cake mix
1 gallon vanilla ice cream (rectangle box preferred like Breyer's
Fruit of choice
Prepare cake mix as directed on the box. Bake in a cookie pan (a shallow pan). Let cool.
Open the ice cream. Take a butter knife and run it along the edges of the carton. Then take a pair of scissors and cut the carton off. Cut the ice cream into 1 inch square.
Layer the ice cream and cake. Stick in the freezer for 20 - 30 minutes.
Top with fruit and serve.
